Swordfish on wasabi potato mash with sweet ABC sauce
 
A beautiful mix of Asian flavours smashed into creamy buttery mash potatoes that really shines when served alongside Fogdog Shake n Bake coated Swordfish steaks 

Ingredients:
  • Enough potatoes for you or our family
  • Melted butter and milk to your desired consistency
  • 1 tbsp soy sauce
  • 1 tbsp wasabi. It will lose its intensity when added to the mash.
  • 1 tbsp minced garlic
  • Pinch sea salt + white pepper
  • 1 spring onion, sliced thinly
  • ½ a fresh mild chilli, dice
Optional: additional melted butter and 1 tbsp crispy Chinese chilli oil and black sesame seeds to garnish

Instructions
  • Peel and chop potatoes. Boil in salted water until soft.
  • Drain liquid and return potatoes to the cooking pot. Add milk, butter, garlic, soy, wasabi and mash until smooth. Taste and season with salt and pepper.
  • Transfer mash to serving bowls, garnish with spring onion, chilli (Optional: black sesame seeds and/or drizzle with butter-infused chilli oil)
Shake and Bake Cooking Directions:
  • Add a reasonable amount of Fogdog coating mix into a plastic bag
  • Add swordfish and lightly shake it till fully coated
  • Allow food to sit for a few minutes to infuse flavour
  • Pan Fry with a bit of oil
  • Serve on top of mash with ABC Sweet Soy Sauce on the side. Delicious!
